Ingredients:

For Vvelveting beef:

For corn flour slurry:

For stir frying:

* For a thicker consistency, you may need to prepare a little more corn slurry by multiplying both ingredients.

Directions:

1. Velvet beef

1.1.

Thinly slice (and I mean thin) your beef.

1.2. Place it in the medium mixing bowl and add:

1 TSP of baking soda
1 TBSP of light soy sauce

And thoroughly stir.

1.3.

Let it rest in the room temperature for 30 minutes (and up to 2 hours for best result).

2. Corn flour slurry:

2.1. Place into the small mixing bowl:

1 TBSP of corn flour 
2 TBSP of water

And thoroughly stir.

2.2. Set aside for later step.

Important:
Make sure to thoroughly stir it right before adding that in the pan in later step.

3. Stir fry:

3.1. Preheat stir fry pan with 2 TBSP of frying oil on high heat burner and add:

Velvet beef from step 1

Stir fry with stirring unice brown (about 2 – 3 minutes).

3.2.

Place beef into a medium mixing bowl for the later step.

3.3. Return stir fry pan to the high heat, add 2 TSBP of the frying oil and then add:

4 cloves of garlic – finely chopped
1 PCS of ginger – finely chopped

And cook for about 1 – 2  minutes with constant stirring.

3.4. Then add:

4 TBSP of brown sugar
1 TBSP of dark soy sauce
1 TBSP of water

And thoroughly stir.

3.5.

Reduce heat to medium-high.

3.6.

Shortly stir your conr slurry prepared in step 2 and then add to the pan while constarnt stirring the content. Then cook until thickens (for about 30 seconds).

3.7.

Return beef to the pan and cook until beef absorbs flavor of the ginger, garlics and soy sauce (about 1 – 2 minutes or to the taste).

3.8. Add:

1 bunch of spring onion – chopped

And cook while constant stirring to warm spring onion thorough.

4. Serving:

Sorry, got to go old school with this one, a nice big bowl of boiled rice! Oh and some Prawn Crackers!
