Ingredients:
Chicken Marination
- 4 chicken thighs - boneless
- 4 TBSP of olive oil
- Juice from 1 lime
- 1 TBSP of red wine vinegar
- 1 TSP of maple syrup
- 1 TSP of English mustard
- 1 TSP of dried garlic powder
- ½ TSP of ground smoked paprika
- ½ TSP of table salt
- ¼ TSP of ground black pepper
Salad
- 1 cup of iceberg lettuce - fresh and finely sliced
- ½ cups of coleslaw salad mix - shredded
- 1 cup of cherry tomatoes (baby tomatoes) - cut in half
- ½ cup of cucumber - fresh and finely sliced (peeling is optional)
- ½ cup of red onion - peeled and sliced
Light & Zesty Lemon-Herb Dressing
- 6 TBSP of olive oil
- Juice from 1 lemon
- 1 TSP of English mustard
- 1 ½ TSP of maple syrup
- ½ TSP of dried garlic powder
- ½ TSP of table salt
- ¼ TSP of ground black pepper
- ½ TBSP of fresh basil - finely chopped
- ½ TBSP of fresh parsley - chopped
Garnish
- hard-boiled eggs (store-bought or recipe here)
- parmesan cheese - shredded
Tools:
- 1x Measuring Cups
- 1x Measuring Spoons
- 1x Chef’s knife
- 1x Cutting Board
- 1x Mixing Bowls
- 1x Cooking Fork or Regular Fork (for mixing salad dressing)
- 1x Large Fry Pan or Sauté Pan or Stir Fry Pan
- 1x Tongs
- 1x salad bowl

Marinate the Chicken
- In a bowl, whisk together olive oil, lime juice, vinegar, honey, mustard, garlic powder, paprika, chili flakes, salt, and pepper.
- Coat the chicken well and marinate for at least 30 minutes (overnight for a deeper flavor).
Grill the Chicken
- Heat a grill or pan over medium-high heat.
- Cook the chicken for 5-7 minutes per side until golden and internal temp reaches 165°F (74°C).*
- Let the chicken rest for 5 minutes, then slice thinly.
Make the Dressing
In a small bowl, whisk together all dressing ingredients until smooth and well combined.
Assemble the Salad
- Toss lettuce, cabbage slaw, cherry tomatoes, cucumber, bell pepper, and red onion in a large salad bowl.
- Drizzle the lemon-herb dressing all over and mix into the salad
