Ingredients:

* It’s up to you if you use chicken freshly cooked in boiling water, leftovers, or canned and drained. Or, you can substitute with shrimp. Buy already cooked shrimp and simply defrost them.

1. Salad preparation

1.1. Place all ingredients into a medium mixing bowl:

2 cups diced chicken or shrimp
½ cup pineapple – diced
½ cup mushrooms – sliced
½ cup of plain white yogurt
½ cup of mayonnaise
Juice from ½ of lemon
½ TSP of salt
¼ TSP of ground pepper
Optionally: 2 cups of cooked and cooled pasta

Thoroughly fold together with a spatula.

Taste and add salt and/or pepper if needed.

1.3.

Refrigerate overnight for best results (ingredients will be able to completely settle).
