Ingredients:

* Use any kind of asparagus you like. I’m using the most common green asparagus, because it grows on my garden.

Directions:

1. Prepare & blanch asparagus:

Fill a medium pot with water, about ½, and place it on a high heat burner. Bring it to a boil.

Meanwhile rinse asparagus and then cut off and dispose bottom ⅓.

When water reaches a boil, place asparagus into blanch for about 30 – 60 seconds.

2. Sear:

2.1.

In the meantime, preheat the fry pan on high heat with 1 TBSP of frying oil.

2.2.

Remove the asparagus from the water, let the water drip off shortly, and place into a preheated fry pan (it is easiest to use tongs).

2.3.

Sear on high heat until you reach a nice sear (about 3 minutes). Turn the asparagus during searing (you can use tongs to flip the asparagus in the pan).

3. Final phase:

3.1. Lower the heat to medium-low and add:

Juice from ½ of the lemon
Drizzle of Extra Virgin Olive Oil
2 TBSP of butter
¼ TSP of salt
¼ TSP of ground pepper

Sauté until the butter melts and all ingredients are combined (about 1 minute).

3.2.

Taste and add salt or pepper if needed.
