Ingredients:

  • 2 TBSP of frying oil (adjust if needed)
  • 1 onion - peeled and chopped
  • 4 LB of Roma tomatoes - cut into large pieces (* (or 6 cups diced or crushed, from a can with liquid, or puree))
  • 2 TBSP of Extra Virgin Olive Oil
  • 2 cloves of garlic - peeled and grated (or pressed)
  • ¼ cup of basil - fresh and finely chopped (or 1 TBSP of dried basil)
  • ½ TSP of salt
  • ¼ TSP of pepper - ideally freshly ground

*Use any kind of tomatoes you like. Peeling them is not necessary since you will end up processing the sauce with an immersion blender anyway. If you want to peel them anyway, the easiest way is to perform a crosscut on the bottom and cut off the part after the stem. Then, blanch them in boiling water for about 30 seconds. Place them into ice water to cool (about 1 – 2 minutes), and then simply peel them by hand. The process of peeling off tomato skins can be simplified using a fruit and vegetable strainer attachment or a slow juicer attachment for KitchenAid (with a saucing screen).

1. Sauce base:

1.1. Preheat a saucepan on medium-high heat with 2 TBSP of frying oil and add:

1 medium onion – finely chopped

Sauté with occasional stirring until glossy (about 2 – 4 minutes).

4 LB of Roma tomatoes – cut into large pieces
2 TBSP of Extra Virgin Olive Oil

Briefly stir and bring to a simmer with occasional stirring.

Then cook for about 25 minutes with occasional stirring. The time can be cut in half if you are using tomato puree.

2. Finishing phase:

2.1. Add:

2 cloves of garlic – grated
¼ cup of fresh basil – finely chopped
½ TSP of salt
¼ TSP of ground pepper 

Briefly stir and let cook for about 5 minutes with occasional stirring.

2.2. Using the immersion blender, briefly process while still cooking, and then cook for an additional 5 – 10 minutes.

Tip:
If you would like to have your sauce thicker, just simply continue cooking to the desired thickness, but keep in mind that the sauce will thicken more while cooking with pasta.
