1. Prepare the Dressing:

Let’s start the preparation of the Watermelon and Feta Salad by making the dressing.

  • In a small bowl or jar, whisk together the extra virgin olive oil, fresh lime juice, honey (if using), salt, and pepper until well combined.
  • Set aside.

2. Combine Salad Ingredients:

  • In a large, wide serving bowl, gently combine the cubed watermelon, crumbled feta, and thinly sliced red onion.

3. Add Herbs:

  • Just before serving, sprinkle the fresh mint leaves over the salad.
  • If you’re using cucumber, add it in this step as well.
