Directions:

1. Prepare the Vegetables:

Let’s start by preparing the vegetables for the Tomato, Cucumber, and Red Onion Salad.

  • In a large bowl, combine the chopped tomatoes, sliced cucumber, and thinly sliced red onion.
  • If using fresh herbs, add them to the bowl.

2. Make the Vinaigrette:

  • In a small bowl or liquid measuring cup, whisk together the extra virgin olive oil, red wine vinegar, optional sugar or honey, salt, and pepper until well combined.

3. Combine and Toss:

  • Pour the vinaigrette over the vegetables.
  • Gently toss everything together until the vegetables are evenly coated.

4. Serve Tomato, Cucumber, and Red Onion Salad:

  • Give the salad one final toss before serving.
  • Taste and adjust seasoning with additional salt and pepper if needed.

Tips:

  • Cheese: For a touch of creaminess and a salty kick, crumble in some feta cheese just before serving.
  • Spice it Up: For a hint of heat, add a pinch of red pepper flakes to the vinaigrette.
  • Add Some Crunch: Toasted croutons or a sprinkle of sunflower seeds can add a delightful textural contrast.
  • Make it a Meal: To transform this side salad into a light lunch, add a can of drained chickpeas or some grilled chicken strips.
  • De-flame the Onion: If you find the taste of raw red onion too sharp, you can mellow it by soaking the slices in a bowl of ice water for about 10-15 minutes before adding them to the salad. Be sure to pat them dry.
  • Seeding for Less Water: For a less watery salad, you can seed the tomatoes and cucumbers before chopping. Simply scoop out the seeds with a small spoon.
