1. Potato preparation & cooking:

1.1. Rinse potatoes under cold water.

Then peel (or leave unpeeled as you wish).

Dice to uniform dices (size about 3/8”).

Place into a medium pot and then fill the pot with water (about 1” above the level of the vegetables).

Cover the pot with a lid and place on a high heat burner. Bring to a boil.

Lower heat to medium and boil until fully cooked (about 12 – 15 minutes). Take one out and taste to make sure it is done.

Drain the water by pouring over a colander and place on a baking sheet to totally cool.

Cook green beans (3 – 4 minutes in boiling water) and add into a larger mixing bowl.

Hard Boiled Eggs

Perfect hard boiled eggs have a solid egg with a solid yolk as well. Perfectionists will also try to target when the total center of the yolk (with a diameter of about ¼” or less) is shiny and almost runny. Hard-boiled eggs are great for sandwiches, salads, or even a quick healthy snack.

3. Mix salad:

3.1. Add into the large mixing bowl:

½ LB of baby tomatoes – cut in half
4 OZ of loose leaf lettuce mixture
2 OZ  of arugula
½ of a shallot – finely chopped
2 cloves of garlic – grated
Juice from 1 lemon
1 cup of tuna
¼ cup of capers – finely chopped
10 fillets of anchovies – finely chopped
4 TBSP of Extra Virgin Olive Oil
½ TSP of ground pepper
½ TSP of salt

Thoroughly, but gently mix together with a spatula.

3.2.

Taste and add additional olive oil, salt and pepper if needed.

4. Final phase:

4.1. Place a mixed salad on a large platter and top the salad with the following ingredients (or create 4 individual portions each topped with ¼ of the following ingredients):

Hardboiled eggs – cut into halve
1 cup of Kalamata olives

4.2.

Sprinkle with parmesan shavings and freshly ground salt and pepper.

4.3.

Optionally serve with one piece of an herb baguette.
