1. Ribs Preparation:

Let’s start the preparation of American BBQ – Honey Pork Ribs!

Note: Pre-baking the ribs at a low temperature is essential—the final ribs will fall apart and be incredibly juicy.

1.1.

Set oven or grill to preheat to 275°F.

1.2.

First, ensure the meat is properly rinsed under cold water.

1.3. Optionally remove the membrane (silver skin) from the back of the ribs.

Notes:

  • I personally do not remove the membrane since I do not find that beneficial, thanks to the long cooking process that will deliver a pleasant texture of the entire ribs, including the membrane.
  • This also holds ribs better together. However, removing the membrane can slightly improve the absorption of flavors from that side (in my experience, it is marginal).

1.4.

Optionally cut each rack of ribs into 4–5 pieces for easier handling.

2. Brush the Ribs:

Note: This step is best performed before applying dry rub to help it adhere better and provide a garlic undertone without using the usually heavily processed garlic powder.

2.1. Place into a measuring pitcher:

¼ cup of Extra Virgin Olive Oil
6 cloves of garlic (peeled and grated or pressed)

Process with an immersion blender until fully combined.

2.2.

Brush the ribs evenly on both sides with the garlic mixture.

3. Dry Rub:

3.1. Place into a medium mixing bowl:

½ cup of brown sugar
2 TBSP of smoked paprika (or regular paprika)
1 TBSP of salt
1 TBSP of coarse-ground pepper
 

Thoroughly stir with a whisk until the ingredients are fully combined and the mixture is uniform.

3.2.

Then coat the ribs thoroughly and evenly from both sides with the dry rub.

4. Assemble:

4.1.

Prepare two large sheets of aluminum foil, each to fully wrap one rack of ribs (or use an equivalent amount of smaller aluminum sheets).

4.2.

Create a bed from brown sugar by sprinkling 1 TBSP of extra brown sugar in the middle of each piece where the ribs will be lying next.

4.3.

Place the ribs on the meat-side down onto the sugar.

Drizzle evenly 2 TBSP of honey (divided equally between the two racks).

Place 3 TBSP of butter to each rack of ribs.

4.6.

Finally, drizzle evenly with ¼ cup of apple cider vinegar (divided equally between the two racks).

4.7.

Wrap the ribs tightly, using more aluminum foil if needed to ensure a perfect seal.

Then place the packets onto a baking sheet.

5. Precook the Ribs:

5.1.

Place the baking sheet with the wrapped ribs into the preheated oven (or place the wrapped ribs onto the preheated grill over indirect heat).

5.2.

Bake (or grill) for 2 ½ hours.

6. BBQ sauce for Brushing:

Meanwhile, prepare the BBQ sauce for Brushing:

6.1. Preheat the saucepan on medium-high heat with 2 TBSP of frying oil and add:

1 medium onion – peeled and finely chopped

Sauté with occasional stirring until glossy (about 3 – 4 minutes).

6.2. Lower the temperature to medium and add:

2 TBSP of butter
¼ cup of brown sugar

While stirring, let the sugar caramelize (about 2 minutes).

6.3. Then add:

½ cup of honey
1 cup of ketchup
¼ cup of apple cider vinegar
3 cloves of garlic – peeled and grated (or pressed)
2 TBSP of Worcestershire sauce
2 TBSP of smoked paprika (or regular paprika)
1 TBSP of Dijon mustard
Optionally: 1 TSP of Chili powder (spicy)
Optionally: 1 TSP of ground cayenne pepper (spicy)
½ TSP of salt
½ TSP of coarse-ground pepper

Briefly stir.

6.4.

Bring it to a simmer (about 195°F) with occasional stirring.

6.5.

Lower the heat to medium and cook for about 10 minutes with occasional stirring.

6.6. Process until smooth with an immersion blender (while still cooking in the pot).

Optional: Or, for a really fine texture, pour the sauce into a kitchen food processor and process until smooth for about 3 minutes on high speed (be careful when handling the hot sauce and make sure to leave an opening on the top of the kitchen food processor to prevent “explosions”).

6.7.

Then cook with occasional stirring until all ingredients are nicely incorporated and the sauce reduces by about 25% to reach a nice, sticky glazing consistency (about 5 – 10 minutes).

6.8.

Taste and add sugar, apple cider vinegar, and salt or pepper if needed.

7. Finish the Ribs Preparation:

7.1.

When ribs are completed after 2 hours and 30 minutes of precooking in the oven (or on the grill), carefully remove them from the oven (or grill).

7.2.

Then adjust the oven or grill temperature to 350°F.

7.3.

Carefully unwrap the ribs from the aluminum foil, being cautious of the hot steam, and discard the foil.

7.4.

Place the ribs meat-side down on a baking sheet lined with parchment paper (or directly on the grill).

7.5.

Brush the exposed bone side evenly with the prepared BBQ sauce.

7.6.

Roast or grill for 10 minutes.

7.7.

Carefully turn the ribs meat-side up, brush generously with more BBQ sauce, and roast or grill for another 10 – 15 minutes until a beautiful, nicely caramelized, and sticky glaze is reached.

7.8.

Remove from the oven or grill, let rest for 2 to 5 minutes to lock in the juices, and then serve.

8. Serve American BBQ – Honey Pork Ribs:

Serve ribs with herbed baguette and coleslaw.

8.2.

Great to be served with jalapenos, pickles, BBQ sauce, or spicy sauce.
