1. Dressing preparation:

1.1. Place into a small mixing bowl:

¼ cup of cold water
1 TBSP of Extra Virgin Olive Oil – adjust if needed
1 TBSP of white vinegar – adjust if needed
1 TBSP of powdered sugar
½ TSP of salt
½ TSP of ground pepper – ideally freshly ground

Thoroughly stir until fully combined using a whisk.

2. Salad assembly:

2.1. Place into a medium mixing bowl:

2 LB of tomatoes – diced
1 onion – finely chopped
Dressing prepared in step 1

Thoroughly stir with a spatula until fully combined.

Taste and add Extra Virgin Olive Oil, white vinegar, salt, and/or pepper if needed. Decorate with fresh parsley.
