Directions:

1. Start with cooking pasta:

1.1.

Bring a large pot of salted water to a boil.

1.2. Add:

8 OZ of fettuccine

Cook to al dente, according to the packaging instructions.

2. Saute:

2.1. Meanwhile, preheat large fry pan with 2 TBSP of olive oil on medium heat and add:

4 slices of bacon – diced

Cook until the bacon starts to crisp, stirring occasionally.

2.3. Add:

2 shallots – finely chopped
8 OZ mushrooms of your choice, sliced

Cook until the mushrooms are softened and lightly browned (about 5 minutes).

2.4. Add:

½ cup of sun-dried tomatoes – thinly sliced
Pinch of salt
Pinch of pepper

And cook for an addtional 2 minutes with occasional stirring.

3. Finish cooking pasta:

3.1.

When the pasta is done, reserve ¼ cup of the cooking liquid and then drain the pasta.

4. Complete the meal & serve:

4.1. Add the drained pasta to the pan with the bacon mixture, and toss to combine.

Tip:
If the pasta seems dry, add some of the reserved cooking liquid, a tablespoon at a time.

4.2.

Serve the pasta with freshly grated Parmesan cheese. Enjoy!
