Let’s start the preparation of Sesame Crusted Ahi Tuna with the preparation of the Marinade.
¼ cup of soy sauce
Juice from 1 lemon
1 TBSP of toasted sesame oil
1 TBSP of Extra Virgin Olive Oil
1 clove of garlic – grated
½ TSP of ground ginger
¼ TSP of ground pepper
¼ TSP of salt
Stir together with a whisk until fully incorporated (about 30 seconds).
Make sure that the tuna fillets are properly rinsed under cold water.
Cut the tuna into individual steaks (unless you bought already precut).
Place the tuna into a freezer bag and then pour in the marinade prepared in step 1.
Let marinade on the countertop or about 15 – 30 minutes or in the fridge for a few hours or even overnight.
Place sesame on the plate. If you use both color sesame seeds, stir both kinds together.
Preheat the fry pan on medium heat with 2 TBSP of frying oil.
Place a salmon steak in the pan and pan fry from each side for about 2 – 3 minutes. *
Optionally, slice.
Place on plates and serve with your favorite side.
* Tuna cooked this way will be cooked only around the diameter and the inside will still be raw. This will give you a delicate and perfectly balanced flavor. While cooking tuna this way is a common method, it goes against the recommendation of the USDA, which recommends 145°F as the minimum safe serving temperature for fish. You can optionally extend the cooking time to reach this temperature (the cooking time will be about 4 – 6 minutes from each side) – check with a food thermometer in the thickest point. Consumption of raw fish is your decision and responsibility.
USDA minimum safe internal temperature is 145°F
