Ingredients:
Czech Potato Soup Bramboračka:
- 3 TBSP of frying oil (any kind) (adjust if needed)
- 1 onion - peeled and chopped (medium size)
- ½ LB of mushrooms of your choice
- 1 LB of potatoes - peeled and diced (ideal size is about ½")
- 4 cup of beef broth (or vegetable broth)
- 2 cup of water
- 2 bay leaves - fresh or dry
- 1 TBSP of whole caraway seeds
- 1 heavy cream
- 2 garlic - peeled and grated (or pressed)
- 1 TSP of salt (*)
- ½ TSP of ground pepper

Directions:
1. Sauté Vegetables:
Let’s start the preparation of Czech Potato Soup Bramboračka by sautéing the onion.
1.1. Preheat a medium pot on medium-high heat with 3 TBSP of frying oil and add:
1 medium onion – finely chopped
Sauté with occasional stirring until glossy (about 3 – 4 minutes).
1.2. Add:
½ LB of mushrooms
Sauté, stirring occasionally, until the mushrooms are cooked and reduce in volume (usually about 3-4 minutes).
1.3. Add:
1 LB of potatoes
Sauté for an additional 2 minutes with occasional stirring.
2. Simmering:
2.1. Add into the pot:
4 cups of beef broth
2 cups of water
2 bay leaves
1 TBSP of caraway seeds
Briefly stir and cover with a lid. Bring it to a simmer (about 195°F) with occasional stirring.
2.2.
Lower the heat to medium and cook for 20 minutes with occasional stirring.
3. Finishing Phase:
3.1. Remove the bay leaves and add:
1 cup of heavy cream
2 cloves of garlic – grated
1 TSP of salt
½ TSP of ground pepper
Briefly stir together and cook without a lid with occasional stirring for an additional 5 minutes.
3.2.
Optionally, add water or broth if the liquid evaporates more than it should, and then cook for an additional 3 minutes.
3.3.
Taste and add salt and/or pepper if needed.
4. Serve the Czech Potato Soup Bramboračka:
4.1.
Serve with fresh sliced bread.
