Ingredients:

The Batter (Base):

  • 2 sticks of butter - room temperature (½ LB, soft, unsalted or skip the salt in the next step)
  • 2 of large eggs - room temperature (remove from the fridge about an hour before you start)
  • 1 cup of granulated sugar
  • 2 TSP of baking powder

Directions:

1. Preheat Oven and Prepare Pan:

Let’s start the preparation of the banana bread recipe by preheating the oven.

1.1.

Set oven to 350°F and grease and flour your pan.

2. The Batter:

2.1. Place into a kitchen mixer with a whisk attachment:

2 sticks of soft butter
2 large eggs
1 cup of granulated sugar
2 TSP of baking powder

Process on high speed until fully incorporated and a creamy texture is reached (about 2 – 3 minutes).

2.2. Add:

3 soft bananas – peeled
Zest from 1 lemon
1 TSP of ground cinnamon
¼ TSP of salt

Process on high speed until bananas are mashed and nicely combined with other ingredients (about 3 – 5 minutes).

Important:
If bananas are fresh or if they were black and just taken from the cold fridge, it may take significantly longer to incorporate them thoroughly, even 15 minutes or longer. In that case, the batter will look separated, and the key is to keep going until it improves at least partially or, ideally, until fully combined. Using soft enough room-temperature bananas will speed up that process.

2.3. Add:

2 cups of all-purpose flour

Process on a slow speed until all ingredients are partially combined.

Then, increase the speed to medium-high and process until completely combined (about 2 minutes).

2.5. Optionally add:

1 cup of chocolate chips

And fold together using a silicone spatula (hand fold).

3. Bake and Serve Banana Bread Recipe:

3.1.

Gently pour and distribute the cake batter in a cake pan using a silicone spatula.

3.2.

Bake in a preheated oven until fully baked (usually for about 50 – 70 minutes).

3.3. Test with a toothpick.

Important:

Test thoroughly using a toothpick because while the center can be fully baked, there can be parts that are still raw. These parts would be edible, but some may find them unappetizing. Another way to find out that your banana bread needs more time is to gently shake it – if it is at least a little jiggly, it needs more time.

3.4.

Let it rest in the pan for about 10 minutes and then carefully remove (do not burn yourself).

3.5.

Optionally, let it fully cool in the pan (please note that some pans may stick, but if you use silicone ones, they will be fine).
