Ingredients:
Onigiraizu
- 2 sheets of nori - full sized
- 2 cups of sushi rice (Japanese short grain rice) - cooked and cooled
- 2 TBSP of mayonnaise
- 1 TSP of sriracha sauce
- 1 TSP of nori furikake
- 2 scallions (green onions) - finely sliced
- ½ cup of red cabbage - shredded
- 2 slices of heirloom tomato
- ½ avocado - thinly sliced
Directions:
2. Build the sandwich
Place one sheet of nori on your prep surface. (It should look like a diamond and the rough side should be facing upwards.) Use 1/2 cup of the prepared sushi rice to press a square in the center of the nori.
Spread half of the spicy mayo over the rice and sprinkle with half of the nori furikake.
Top with 1 tomato slice, and half of the green onions, red cabbage, and avocado, much like making a sandwich.
3. Fold the seaweed
Finish the sushi sandwich by topping with 1/2 cup of prepared sushi rice. For best results, press the square out loosely in your hand first before placing over the fillings.
Fold the edges of the nori towards the center of the rice. Ideally it should cover the rice. Wrap the sushi sandwich in plastic wrap and set aside.
Repeat steps with the remaining ingredients to form a second sushi sandwich.
4. Slice and serve
The sushi sandwiches should be kept wrapped until serving.
To cut, use a sawing motion to cut through the plastic wrap and cut the sandwiches in half. Remove the plastic wrap and enjoy!
