Ingredients:
Ingredients
- 14 OZ of extra-firm tofu
- Optionally: 1 TSP of ground turmeric (for color only)
- ½ TSP of chili powder (seasoning)
- ½ TSP of ground cumin
- 1 clove of garlic - peeled and grated (or pressed)
- salt (to taste)
- ground pepper (to taste)
- 3 tomatoes of your choice - diced
- 2 TBSP of cooking oil (any kind) (adjust if needed)
- 1 red bell peppers - finely chopped
- Optionally: 1 TBSP of jalapeno peppers (chili) (spicy)
- 1/4 cup of chives - finely chopped

Directions:
1. Prep the Tofu:
Let’s start the preparation of Southwestern Tofu Scramble.
- Remove tofu from its’ package.
- Drain excess liquid.
- Place tofu into a mixing bowl and crumble with your hands.
2. Combine the Seasoning:
In another bowl, add:
Tumeric
Cumin
Chili powder
Salt
Pepper
Zested garlic
Stir all together.
3. Combine Seasoning and Tofu:
Add the seasoning mixture to the bowl with tofu and using a spatula, coat the tofu.
4. Prep the Vegetables:
- Dice the three tomatoes.
- Dice the red bell pepper.
- Dice the jalapeno pepper.
- Chop the chives.
5. Saute the Tofu:
- Saute the tofu on medium-high, heat vegetable oil in a non-stick pan.
- Add the tofu mixture into the pan and stir off and on for approximately 5 minutes.
6. Add Vegetables:
Add into the frying pan:
Diced tomatoes
Diced jalapeno peppers
Diced red bell peppers
Stir consistently for a few minutes until all are thoroughly combined and sauteed.
7. Plate and Serve South Western Tofu Scramble:
Plate tofu mixture and top with chopped chives.
