1. Rice Base:

Let’s start with the preparation of Rice Pudding with Preserve (Rýžový Nákyp) by preparing the rice base.

1.1. Place a small pot on medium heat and add:

2 cups of milk (4/5 of the total amount)
2 cups of cooked rice
½ cup of granulated sugar

Bring it to a simmer with occasional stirring.

1.2.

Lower the heat to medium, cover with a lid, and cook with occasional stirring for 15 minutes.

2. Finishing Rice Pudding:

2.1. Meanwhile, place into a small mixing bowl:

½ cup of milk (remaining 1/5 of total amount)
1 TSP of vanilla extract
½ pack of vanilla pudding powder

Stir using a whisk until fully incorporated.

2.2.

Immediately pour the mixture into the rice with milk (which remains cooking), while constantly stirring the rice with a whisk.

2.3.

Then, cook with constant stirring until it thickens (about 2 – 4 minutes).

3. Assemble Rice Pudding with Preserve Rýžový Nákyp:

Note:

  • Assemble right after the rice pudding is cooked – the longer the pudding sits, the stiffer it will get.
  • Assemble and serve in 4 individual bowls or glasses.

3.1.

Place on the bottom of each glass about 1 ½ TBSP of the preserve.

3.2.

Pour about ¼ of the rice pudding into the glass on top of the preserve.

3.3.

Serve immediately or place in a refrigerator and let fully cool (for at least 1 hour or overnight).
