  • Place your empty baking sheet in the oven and preheat to 425°F (220°C). Preheating the pan ensures an instant sear.
  • In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until every crevice is coated.
  • Ensure the sprouts are dry before tossing; moisture is the enemy of a good char.

2. The High-Heat Roast:

  • Carefully remove the hot baking sheet from the oven.
  • Spread the sprouts onto the pan in a single layer, turned cut-side down. This maximizes contact with the heat for deep caramelization.
  • Roast for 15–20 minutes without moving them.
  • Check the bottoms; they should be a dark, rich brown.

3. Finishing the Garlic Roasted Brussels Sprouts:

  • Remove the pan from the oven and scatter the sliced garlic slivers and red pepper flakes over the sprouts.
  • Use a spatula to toss them gently, then return to the oven for an additional 3–5 minutes. This cooks the garlic just enough to remove the raw bite without burning it.
  • Remove from the oven and immediately drizzle with the honey and balsamic glaze while still on the hot pan.
  • Toss one final time to coat, transfer to a serving bowl, and top with Pecorino Romano if desired.
