1. Prepare the Sauce:

  • In a large pot or Dutch oven, combine the shoyu, water, brown sugar, smashed ginger, and smashed garlic.
  • Stir well to dissolve the sugar.

2. Add Chicken and Aromatics:

  • If using, add the onion wedges and the cut green onions.
  • Bring the mixture to a boil over medium-high heat.

3. Simmer the Chicken:
