Directions:

1. Pineapple Preparation:

Let’s start with the preparation of Grilled Pineapple by preparing the pineapple.

  • Lay the pineapple on its side on the cutting board.
  • With a sharp chef’s knife, carefully slice off the top and bottom of the pineapple.
  • Stand the pineapple up and, following the contour of the fruit, slice off the tough outer skin.
  • Cut the pineapple in half lengthwise, and then cut each half in half again to create four long spears.
  • Carefully cut out the tough core from the center of each spear.

2. Making the Glaze:

  • In a small bowl, whisk together the melted butter, honey or maple syrup, ground cinnamon, cayenne pepper (if using), and a pinch of salt.

3. Grilling the Pineapple:

  • Preheat your grill or grill pan to medium-high heat.
  • Using a pastry brush, generously coat the pineapple spears on all sides with the glaze.
  • Place the pineapple spears directly on the grill grates.
  • Grill for 3 – 5 minutes per side, or until the pineapple is tender and has beautiful grill marks.

4. Serving the Grilled Pineapple:

  • Remove from the grill and let it cool slightly before serving.
  • Garnish with fresh mint leaves and toasted coconut flakes, if desired.
