1. Prepping the Pan and Dry Ingredients:

Let’s start with the preparation of Classic Cast Iron Skillet Cornbread by preparing the pan and dry ingredients.

  • Place the cast iron skillet in the oven and preheat the oven to 400°F (200°C). If using a baking dish, grease it with butter or cooking spray.
  • In a large mixing bowl, whisk together the cornmeal, flour, sugar (if using), baking powder, and salt.

2. Preparing the Batter:

  • In a separate bowl, whisk together the buttermilk, melted butter, and egg until well combined.
  • Pour the wet ingredients into the bowl with the dry ingredients. Stir just until combined; the batter should be lumpy.

3. Baking the Cornbread:

  • If using a cast iron skillet, carefully remove the hot skillet from the oven. Swirl a tablespoon of butter or oil around the bottom to coat it. The hot skillet should sizzle.
  • Pour the lumpy batter into the hot, greased cast iron skillet or the greased baking dish. It should spread evenly and sizzle upon contact with the hot skillet.
  • Place the pan back into the oven.
  • Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
