Directions:

1. Preparing the Potato Topping:

Let’s start with preparation of Classic Shepherd’s Pie by preparing the mashed potato topping.

  • Place the peeled and cubed potatoes in a large pot and cover with cold, salted water.
  • Bring to a boil over high heat.
  • Reduce heat to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.
  • Drain the potatoes in a colander and return them to the hot, empty pot.
  • Let them sit for a minute to allow any excess water to evaporate.
  • Add the softened butter and warmed milk or cream. Using a potato masher or forks, mash until smooth and creamy.
  • Stir in the grated sharp cheddar cheese, and season with salt and pepper to taste. Set aside.

2. Cooking the Lamb Filling:

  • Heat olive oil in a large fry pan (skillet) or Dutch oven over medium-high heat.
  • Add the ground lamb and cook, breaking it up with a wooden spoon, until browned. Drain any excess fat.
  • Add the chopped onion, carrots, and celery to the skillet.
  • Cook for about 5-7 minutes, until the vegetables begin to soften.
  • Stir in the minced garlic, dried rosemary, and dried thyme. Cook for another minute until fragrant.
  • Sprinkle the all-purpose flour over the lamb and vegetables, stirring to coat.
  • Cook for one minute to cook off the raw flour taste.
  • Stir in the tomato paste, beef broth, and Worcestershire sauce.
  • Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.
  • Reduce the heat to low and let the filling simmer for 10-15 minutes, until the sauce has thickened.
  • Remove from heat and stir in the frozen peas. Season with salt and pepper to taste.

3. Assembling and Baking the Classic Shepherd’s Pie:

  • Preheat your oven to 400°F (200°C).
  • Transfer the lamb filling to a 9×13 inch baking dish, spreading it into an even layer.
  • Spoon the prepared mashed potatoes over the lamb filling, carefully spreading it to cover the entire top.
  • Use a fork to create a textured, ridged pattern on the potato surface.
  • Place the baking dish on a baking sheet to catch any potential drips.
  • Bake for 25-30 minutes, or until the potato topping is golden brown and the filling is bubbling around the edges.
  • Let the Classic Shepherd’s Pie cool for 10-15 minutes before serving to allow the filling to set.
