1. Making the Pie Dough:

Let’s start with preparation of Classic American Apple Pie by preparing the pie dough.

  • In a large bowl, whisk together the flour, salt, and granulated sugar.
  • Add the cold, cubed butter and use a pastry blender or your fingers to cut the butter into the flour until it resembles coarse crumbs with some pea-sized pieces of butter still visible.
  • Gradually add the ice-cold water, a tablespoon at a time, mixing with a fork until the dough just comes together. Do not overmix.
  • Divide the dough into two discs, one slightly larger than the other.
  • Wrap each in plastic wrap and refrigerate for at least 30 minutes.

2. Preparing the Apple Filling:

  • In a large bowl, toss the sliced apples with lemon juice to prevent browning.
  • In a separate small bowl, whisk together the granulated sugar, flour, cinnamon, nutmeg, and allspice.
  • Pour the sugar and spice mixture over the apples and toss to coat them evenly.

3. Assembling the Classic American Apple Pie:

  • Preheat your oven to 425°F (220°C). Place a baking sheet on the lowest rack to catch any drips.
  • On a lightly floured surface, roll out the larger dough disc into a 12-inch circle.
  • Carefully transfer it to the 9-inch pie dish, pressing it gently into the bottom and sides.
  • Trim the excess dough, leaving about a 1-inch overhang.
  • Pour the apple filling into the dough-lined dish, mounding the apples slightly in the center.
  • Roll out the second dough disc into an 11-inch circle. You can place this solid piece on top, or cut it into strips to create a lattice top.
  • For a solid top crust, place the dough over the apples, trim the edges to a 1-inch overhang, and crimp the edges of both crusts together.
  • Cut several slits in the top for steam to escape.
  • In a small bowl, whisk the egg and water together to create an egg wash.
  • Brush the top of the pie with the egg wash and sprinkle with coarse sugar.

4. Baking the Classic American Apple Pie:

  • Place the pie on the preheated baking sheet.
  • Bake at 425°F (220°C) for 15 minutes.
  • Reduce the oven temperature to 375°F (190°C) and continue to bake for another 40-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • If the edges begin to brown too quickly, you can cover them with aluminum foil or a pie crust shield.
  • Remove the pie from the oven and let it cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set properly.
