Ingredients:
Cauliflower
- 1 cauliflower - Cut into florets (small)
- 1 TBSP of unsalted butter
- 1 TBSP of all-purpose flour
- 1 cup of whole milk
- 1 ¼ TSP of dried herbs of your choice - mixed
- ¼ TSP of nutmeg - freshly grated
- ¾ cup of Tasty cheese of your choice - grated
- ½ TSP of salt - As per taste (As per taste)
- ½ TSP of ground pepper (adjust if needed, As per taste)
Tools:
- 1x Measuring Cups
- 1x Measuring Spoons
- 1x Chef’s knife
- 1x Cutting Board
- 1x Medium Sauce Pan or Small Pot (4QT) (optionally use a saute pan)
- 1x French Whisk
- 1x Baking Dish (Baking Pan), Lasagna Pan or Oval au Gratin (small size)
- 1x Silicone Spatula
Directions:
1. Preheat the Oven:
- Preheat your oven to 200°C (400°F).
2. Cook the Cauliflower:
- Bring a medium saucepan of salted water to a boil.
- Add the cauliflower florets and cook for 5 minutes until just tender but still firm.
- Drain well and set aside.
3. Make the Cheese Sauce:
- In a small saucepan, melt the butter over medium heat.
- Add the flour and stir continuously for about 1 minute to form a roux (a thick paste).
- Gradually add the milk, whisking constantly to prevent lumps, until the mixture is smooth and starts to thicken, about 3-4 minutes.
4. Add Seasonings and Cheese:
- Stir in the mixed herbs, and season with salt and black pepper to taste.
- Add the grated cheddar cheese and continue to stir until the cheese is fully melted and the sauce is creamy and smooth.
TIP:
Move the pan from the heat when mixing in cheese, this help make it very smooth.
5. Assemble the Dish:
- Arrange the cooked cauliflower florets in a small baking dish.
- Pour the cheese sauce evenly over the top, ensuring all the florets are coated.
TIP:
Feel free to add a little extra grated cheddar on top for a golden, cheesy crust.
6. Bake:
- Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown on top.
7. Serve:
- Let the cauliflower cheese cool for a few minutes before serving.
- Enjoy it as a comforting side dish to any meal!
