1 Prepare the Prime rib

1.1 Room Temp

Remove the Prime rib from fridge, sit on a plate covered on counter to bring to bring to room temp, this allows the meat to cook evenely in the oven.

1.2 Preheat Oven

Heat oven to 450°F, you need this so the roast will create a nice crispy outside.

2 Season the Roast

2.1 Make the seasoning paste

In the mixing bowl combine the butter, garlic, thyme, rosemary, salt and pepper.

2.2 Coating the Prime rib

Now take a couple of Paper towels and dry the outside of the roast. now i used latex gloves but i smeared the roast with the butter mix all over the outside. this will create your flavorful crust.

3 Roasting

3.1 Initial High cook

Place the roast on a rack in a roasting pan, fat side up. Roast at 450°F (230°C) for about 15–20 minutes to develop a nice, golden crust.

3.2 Reduce Heat

After 15–20 minutes, lower the temperature to 325°F (165°C) and continue roasting for about 15–20 minutes per pound (for medium-rare), or until the internal temperature reaches:

  • Rare: 120°F (49°C)
  • Medium-rare: 125°F (52°C)
  • Medium: 135°F (57°C)
  • Well-done: 145°F (63°C)

Note: Cooking times can vary, so it’s best to use a meat thermometer for accuracy.

4 Resting VERY IMPORTANT

4.1 Rest the Meat

Once the roast reaches your desired temperature, remove it from the oven. Let it rest, covered loosely with foil, for at least 15–20 minutes. This allows the juices to redistribute within the meat, ensuring it stays tender and juicy.

5 Carve and Serve

5.1 Carve the Roast

Using a sharp knife, slice the prime rib against the grain into thick, juicy slices. Serve with au jus, horseradish sauce, or a rich gravy if desired.

Additions

Sides: Pair your prime rib with classic sides like mashed potatoes, roasted vegetables, Yorkshire pudding, or a fresh salad.

Sauce: Serve with a creamy horseradish sauce or a rich gravy to complement the beef’s flavor.
