Ingredients:
Whoopie Pies:
- 2 cups of almond flour
- ½ cup of salted butter - room temperature
- ½ TSP of baking soda
- ¾ cup of granulated sugar-free sweetener
- Pinch of sea salt
Additional Ingredients (Added Later):
- 2 eggs
- ¼ cup of almond flour
- ½ TSP of green gel food coloring
Cream Cheese Frosting:
- 12 OZ of cream cheese - cool but soft
- 4 OZ of salted butter - room temperature
- ½ cup of powdered sugar-free sweetener
- 2 TSP of vanilla extract
Tools:
- 1x Measuring Cups
- 1x Measuring Spoons
- 1x Medium Mixing Bowl (3 – 4 QT)
- 1x Kitchen Mixer with Whisk Attachment (or hand mixer)
- 1x Silicone Spatula
- 2x Baking Sheet with Parchment Paper or Silicone Matt
- 1x Pastry Bag with Pastry tips (decorating bag)
Directions:
1. Preheat and Prep:
Let’s start the preparation of Keto St. Patrick’s Day Whoopie Pies by preheating the oven.
- Heat oven to 350°F.
- Line 1 large cookie sheet with cooking parchment paper.
2. Combine Dry Ingredients:
- Mix whoopie pie ingredients in a bowl until a stiff dough forms.
3. Add Wet Ingredients and Color, then Pipe:
- Add eggs, extra almond flour, and green food coloring.
- Beat with an electric mixer until well-blended.
- Scoop the mixture into a decorating bag with a fitted tip or a freezer bag with a small corner snipped off.
- Pipe the batter into 30 2-inch circles set 1 inch apart.
4. Bake and Cool:
- Bake 8 to 10 minutes until the cookies spring back when touched.
- Allow to cool completely before applying frosting.
5. Make the Keto Cream Cheese Frosting:
While the cookies are cooling, make keto cream cheese frosting.
- In a medium bowl, beat cream cheese until smooth with an electric mixer on high.
- Add sweetener, butter, vanilla extract and beat until smooth and whipped.
- Refrigerate for 30 minutes to make it easier to work with before adding frosting to the pies.
