Brown Sugar & Fig Mochi
This fruit-filled dessert is visually stunning, but not nearly as difficult as it may seem to make. The mochi dough is prepared in the microwave while store bought almond paste is simply mixed with black sesame seeds to create the middle layer. And the best part? No baking is required!

Ingredients:
Black Sesame Marzipan
- ½ cup of vegan almond paste
- 1½ TSP of black sesame seeds
Fig Center
- 6 figs - fresh and whole
Brown Sugar Mochi
- 1 cup of sweet rice flour
- ⅔ cup of light brown sugar
- 1 cup of water
- ¼ cup of potato starch (adjust if needed, as needed for rolling)

Directions:
1. Make the Black Sesame Marzipan
Work the black sesame seeds into the almond paste with your hands until well incorporated. Divide into 6 equal pieces.
Flatten 1 piece of the black sesame marzipan into round with your hands. Enclose one fig inside the marzipan. Repeat with remaining 5 pieces of marzipan and figs.
Place the covered figs in a container, cover, and refrigerate while you prepare the brown sugar mochi.
2. Prepare the Brown Sugar Mochi
In a microwave safe bowl, mix the sweet rice flour, light brown sugar, and water. Cover loosely with plastic wrap and microwave on high for 2 minutes. Stir again with a whisk and return to the microwave for 2 minutes more. The mochi dough should look translucent. Handle carefully. The container and mochi may be very hot.
Allow the dough to cool at room temperature until it is cool enough to handle.
4. Shape the Mochi
Place one of the black sesame maripan wrapped figs inside 1 piece of the rolled out mochi dough. Pinch the mochi closed around the bottom of the fig.
Place pinched side down on the dusted work surface and twist several times to shape. Repeat with remaining rolled out mochi dough pieces and black sesaem maripan wrapped figs.
5. Serving
Enjoy the mochi right after eating or store covered in the refrigerator for up to 2 days. Allow mochi to sit at room temperature for 10 minutes before serving.
