</div><!-- /.text --><div class="step step-level-2"><h3 class="mark">A.</h3><div class="text"><p>Whole piece of meat:</p></div><!-- /.text --><div class="step step-level-3"><h4 class="mark dot">•</h4><div class="text"><p>This method is great for reaching perfect rotisserie results.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-3"><h4 class="mark dot">•</h4><div class="text"><p>It can be used for any large piece of meat, such as pork ham (raw), pork shoulder, beef roast, beef brisket, turkey breast, whole chicken, whole turkey, and other similar kinds of meats.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-3"><h4 class="mark dot">•</h4><div class="text"><p>Instructions:</p></div><!-- /.text --><div class="step step-level-4"><h5 class="mark">1.</h5><div class="text"><p>Prepare the marinade based on the recipe.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-4"><h5 class="mark">2.</h5><div class="text"><p>Inject with marinade (using a meat injector):</p></div><!-- /.text --><div class="step step-level-5"><h6 class="mark">2.1.</h6><div class="text"><p>Place meat into a large mixing bowl or large food container.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-5"><h6 class="mark">2.2.</h6><div class="text"><p>Collect part of the marinade with the meat injector and inject into the meat &#8211; inject right in front of the bone (or ⅓ deep if you are preparing boneless meat).</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-5"><h6 class="mark">2.3.</h6><div class="text"><p>Repeat injecting evenly into different places on the meat until you run out of marinade.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-5"><h6 class="mark">2.4.</h6><div class="text"><p>Continue the same way with about ½ of the marinade released during injecting.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-5"><h6 class="mark">2.5.</h6><div class="text"><p>Turn the meat in the marinade that was released during injecting.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-5"><h6 class="mark">2.6.</h6><div class="text"><p>Generously salt and pepper the meat on the top and sides (if you are preparing a bird, salt on the breast side and on all sides).</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-5"><h6 class="mark">2.7.</h6><div class="text"><p>Cover the meat with plastic wrap and let it rest (marinating) overnight in the refrigerator (or for at least 3 hours).</p></div><!-- /.text --></div><!-- /.step --></div><!-- /.step --><div class="step step-level-4"><h5 class="mark">3.</h5><div class="text"><p>Place the meat on a gyro needle:</p></div><!-- /.text --><div class="step step-level-5"><h6 class="mark">3.1.</h6><div class="text"><p>Before you start, leave one of the needle&#8217;s forks, which is further from the needle&#8217;s sharp end, in its’ regular spot (the first ⅓ of the needle &#8212; closer to the needle’s handle, should be in), and make sure that its’ screw is tight. Remove the other needle&#8217;s fork and put aside for a later step.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-5"><h6 class="mark">3.2.</h6><div class="text"><p>Remove the marinated meat from the refrigerator and then run the rotisserie needle through the meat. Make sure that the needle goes right through the center to ensure that it will rotate evenly in future steps.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-5"><h6 class="mark">3.3.</h6><div class="text"><p>When the meat gets to the center of the needle, put on the remaining needle&#8217;s fork, and tighten the screw. Both forks should fully penetrate the meat and hold the meat between them very tightly. You may have to adjust the first needle&#8217;s fork in order to reach the center of the meat.</p></div><!-- /.text --></div><!-- /.step --></div><!-- /.step --></div><!-- /.step --></div><!-- /.step --><div class="step step-level-2"><h3 class="mark">B.</h3><div class="text"><p>Steaks &#8211; Gyro Style</p></div><!-- /.text --><div class="step step-level-3"><h4 class="mark dot">•</h4><div class="text"><p>This method is perfect for reaching gyro-like tenderness, cuts, and texture.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-3"><h4 class="mark dot">•</h4><div class="text"><p>It can be used for any kind of smaller-sized meat, such as chicken breasts, or for cuts of meat, such as pork chops or any steak recipe. The meat should not be pounded for this recipe, and the thickness of the meat put on the needle should be ½&#8221; and higher.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-3"><h4 class="mark dot">•</h4><div class="text"><p>Instructions:</p></div><!-- /.text --><div class="step step-level-4"><h5 class="mark">1.</h5><div class="text"><p>Prepare and marinate the meat according to the recipe (skip pounding the meat if required by the recipe).</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-4"><h5 class="mark">2.</h5><div class="text"><p>Place meat on the gyro needle:</p></div><!-- /.text --><div class="step step-level-5"><h6 class="mark">2.1.</h6><div class="text"><p> Before you start, leave one of the needle&#8217;s forks, which is further from the needle&#8217;s sharp end, in its’ regular spot (the first ⅓ of the needle, closer to the needle handle, should be in) and make sure that its’ screw is tight. For this procedure, follow the specific instructions for your rotisserie. For rotisserie on a grill, close the lid and use only indirect heat (high heat on the side, but not under the meat). If you are using an oven or rotisserie oven, follow the enclosed instructions.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-2"><h3 class="mark">3.2.</h3><div class="text"><p>Keep a heat high until you reach the temperature required in the recipe, then adjust the temperature accordingly to be able to stay at the required temperature. I prefer the temperature to be between 300° &#8211; 350°F.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-2"><h3 class="mark">3.3.</h3><div class="text"><p>Brush with the marinade regularly during the rotisserie process &#8212; preferably every 10 &#8211; 15 minutes.</p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-2"><h3 class="mark">3.4.</h3><div class="text"><p>Cook on a rotisserie until you reach the meat’s desired internal temperature &#8211; check with a food thermometer. </p></div><!-- /.text --></div><!-- /.step --><div class="step step-level-2"><h3 class="mark">3.5.</h3><div class="text"><p>You can wait until the whole meat is done (for example with birds), or you can slice off the cooked layers of meat during the rotisserie process (pork leg, loins, and steaks when you reach a gyro-like texture). The second option is especially great for parties because it allows for continuous eating as you slice pieces off, bit by bit. But be careful and cut only a thin surface layer; don&#8217;t cut too deep to avoid portioning raw meat. If you accidently do so, place the raw side down on the grill (or pan), and cook until finished.</p></div><!-- /.text --></div><!-- /.step --></div><!-- /.step -->    </div><!-- /.content -->

Unfortunately, it is also considered unhealthy since deep fried food represents higher calorie intake when compared to non-fried food. With frequent consumption it can lead to unwanted weight gain. Even though deep frying sounds for some people almost scary, it is simply submerging food in hot oil which leads to instantly cooking the surface while moisture is trapped in the food and keeps cooking the food from the inside.</p>

        <div class="text"><p>The major problem of deep-fried food is that the food is often prepared in bad oils, which are highly processed, can include trans-fat, and/or don&#8217;t have a high enough smoke point, so they can cause cancer and other illnesses. But, if you select the right frying oil, this big problem is solved. And last but not least, a lot of restaurants overuse and do not clean the oil enough, which also increases the risk of cancer and other illnesses. This problem is also fully solvable in the home environment: you just need to replace the oil often enough.</p>
<p>You need to decide for yourself if you want to eat deep fried food and how often. But in general, moderate and occasional consumption of deep-fried food that is prepared properly can be enjoyed by a healthy person guilt free. Since you don’t have control over frying oil and frying processes outside of the home, it is best to totally eliminate eating deep fried food in restaurants.</p>

        <div class="text"><h2>Do I Need a Deep Fryer?</h2>
<p>The decision is up to you. A deep fryer will make deep frying easier and more consistent, but it is an extra expense and takes extra space. An alternative for using a deep fryer is a pot or fryer pot accompanied by a fryer basket lid that fits the pot and a deep fryer thermometer, which can show temperatures up to 400° (do not confuse this with a basic food thermometer).</p>

<p>In my recipes I refer to this as <b>Frying oil</b>, oils which can handle temperatures close to 400°F. These are examples of high smoke point oils:</p>

<li>Semi refined/refined version of oils like Canola, Sunflower, Safflower, Soy, peanut, corn. etc.</li>
<li>Avocado Oil</li>
<li>Coconut oil</li>
<li>Palm Oil</li>
<li>Ghee (clarified butter)</li>

<p>Hot oil is extremely dangerous so be extremely careful when working with them:</p>
<ul>
<li>Make sure to place your deep fryer on a stable (flat) place and make sure that the deep fryer will not move. Place it far away from the edge of a table/surface. If you are using a pot or fryer pot, place it on the burner farther from you, with the handle pointing away from the edge or stove.</li>
<li>Do not let kids or animals close to the deep fryer during preheating, frying, or cooling.</li>
<li>Always cover with a lid during frying.</li>
<li>Slowly and carefully place (or slip) the food into the preheated hot oil to prevent the oil from splashing you (burning you).</li>
<li>Never place wet food into a deep fryer (for example, when making fries that rest in water.) They will need to be removed and dried with a towel before being placed into oil.</li>
<li>Follow the maximum oil level line in the deep fryer and never overfill it with food. A pot without the maximum oil line should not be filled to more than half.</li>
<li>Never place fingers and hands into the oil. Do not look closely into the deep fryer while frying since the oil can splash into your face</li>

<p>Preheat your oil to the required temperature in your recipe and only place the food in the oil when it reaches that temperature. Always follow the temperatures required in the recipe, but to get some ideas, here is a basic list of deep frying temperatures:</p>
<p>370°F is great for fries, chips, doughnuts.<br />
350°F is perfect for chicken tenders, fish, tenderloins, schnitzel, or fried cheese.<br />
330°F is for large pieces of chicken with bone.<br />
300 &#8211; 320°F is for pre-cooking fries.</p>

<p>A deep fryer has a built-in thermometer and thermostat. It is really easy to check and be aware of oil temperature during any part of the process. The temperature you set up will be reached and the deep fryer will let you know (usually by a diode light) that you have reached it. You also don&#8217;t have to worry that the deep fryer will exceed the temperature you set, so using a deep fryer is very easy and generally safer than frying in a pot on your stove.</p>

        <div class="text"><h2>Specifics for Deep Frying on a Stove and Temperature Control</h2>
<p>Deep frying on a stove requires higher precautions and has a few more rules in order to succeed and keep things safe at the same time:</p>
<ul>
<li>You need to use an external fryer thermometer throughout the whole deep frying process (preheating, deep frying, cooling).</li>
<li>Place the fryer thermometer in a visible area so it is easily readable. Make sure it holds well, and do not place it in the way of the frying basket.</li>
<li>Preheat the pot on a lower heat until you reach the desired temperature, and if you need to increase the heat, change it gradually (in tiny fractions to monitor how it affects the temperature before increasing even more).</li>
<li>Monitor the frying temperature carefully during the whole process since you can&#8217;t take advantage of temperature controls as you can with a deep fryer.</li>
<li>Never exceed the oil temperature of 370°F.</li>
<li>Make sure that you have unlimited access to the stove knob so you can quickly turn off the stove if necessary.</li>
<li>Even though I believe that by following all safety requirements and steps you will do great, I would encourage you to have a lid that fits the pot and a type B fire extinguisher available for the whole process in case of emergency.</li>

But you need to take even more into consideration if the piece is larger (use a food thermometer to test in this case or at anytime when you are not sure). Remove the food from the frier to check the internal temperatures &#8212; never test the internal temperature of meat while deep frying.</p>

<ul>
<li>Turn off the fryer and disconnect from the outlet (or remove from heat).</li>
<li>Let the oil totally cool before any manipulation (at least 2 &#8211; 3 hours).</li>
<li>The oil can be reused for multiple deep frying until it starts looking used (gets darker, bitter tasting, etc.), or for up to 3 months &#8212; whatever comes first. Then, discard it.</li>
<li>You can store oil in a fryer at room temperature (72°F or less) or in a sealed container in the refrigerator for up to 6 months.</li>
<li>Clean the deep fryer regularly. You don&#8217;t have to clean the oil after every single use, but in general, more cleaning is always better.</li>
<li>To clean the oil, strain it through a cheesecloth or sieve.</li>
<li>Dispose of the oil by pouring it into a sealable metal container, such as a coffee can or a gallon milk jug, and then throw it into the trash or use any recycle possibilities if available. Never pour used oil into the sink; it can clog the pipes!</li>

<li><strong>Fire needs oxygen to continue.</strong></li>
<li><strong>By smothering it, you cut off the oxygen.</strong></li>
<li><strong>You can also use baking soda</strong> on the fire, but you need a lot of it to smother a grease fire.</li>
<li><strong>Never douse a grease fire with water or other liquid substances</strong> since these can cause a flare-up and can spread and increase the fire. Never try to carry the pot outside because the oil and fire can spill on you (or your surroundings) and spread throughout the house.</li>

        <div class="text"><h3 id="searing">Searing</h3>
<ul>
<li>Searing is performed most commonly to lock the juices in (meat), create a nice color – sear (meat and vegetables), and add more flavor to the exterior of food.</li>
<li>It is commonly performed on meat or fish or vegetables.</li>
<li>It is an incomplete action, which needs to be followed by other cooking techniques that fully finish the cooking, such as braising, roasting, etc.</li>
<li>In my recipes, you will often find a cooking technique called pan searing with finishing in the oven (finishing in the oven describes following up the pan searing with roasting in the oven).</li>
<li>Searing is performed on medium-high to high heat and any kind of pans or pots can be used. It can also be performed on a grill (some grills even have a specialized searing section).</li>
<li>Because it is a dry-heat cooking method, you only need to use enough oil to just lubricate the pan (your food is never immersed in oil).</li>

<ul>
<li>Finishing in the oven is a technique usually used after searing or pan-frying.</li>
<li>Prior searing or pan-frying allows us to cook the surface to our liking, which in the case of meat provides us with locking in juices. Following finishing in the oven provides us with even cooking thanks to the heat surrounding the food in the oven.</li>
<li>Best is to use the same fry or sauté pan that you used for prior searing or sautéing. Just make sure to use an oven-proof pan and be especially careful when handling the pan if the handle is hot (after being in the oven).</li>

<ul>
<li>Sautéing and stir frying are preparing chopped pieces of food (meat, fish, vegetables) or small food (shrimp, peas, corn, etc.) in a pan.</li>
<li>Sautéing and stir frying are essentially identical and either can be used to explain this cooking technique. In some cases, the major difference can be that stir frying requires preparation in a stir fry pan on a higher temperature.</li>
<li>These can be performed on a fry pan, sauté pan, or stir fry pan (wok).</li>
<li>They are commonly performed on high heat.</li>
<li>Because it is a dry-heat cooking method, you only need to use enough oil to just lubricate the pan (your food is never immersed in oil).</li>

        <div class="text"><h3 id="grilling">Grilling</h3>
<ul>
<li>Grilling is preparing food by applying heat to the surface of the food (usually from the bottom).</li>
<li>The most common grilling technique is to use direct heat (the heat source is right under your food), which can be performed with a grill of any kind, but also on a grill pan or griddle.</li>
<li>The less common grilling technique is to use indirect heat (the heat source is not under the food but is on the sides). Indirect heat uses hot air circulation inside of the grill, but still provides a smokiness and creates a burn pattern.</li>
<li>A direct heat method is great for most grilling, and indirect heat is great for thicker cuts of meat or meat with large amounts of marinade (such as my honey &#8211; BBQ rib recipe) to prevent a fire on the grill.</li>
<li>Grilling is a dry heat cooking method suitable for preparing meat, fish, and vegetables.</li>
<li>Temperatures for grilling vary. Thinner cuts can be grilled on high heat, thicker cuts should be grilled on medium to medium-high heat, and really thick cuts should be grilled on low heat.</li>

<li>Roasting is preparing food by cooking it evenly using dry heat circulation.</li>
<li>Roasting most often describes oven preparation of meat, poultry, some vegetables, and other similar food (why it is often called oven roasting).</li>
<li>Food prepared on a rotisserie on a grill, in the oven, or even over an open fire is considered roasting too. Preparation on a rotisserie is always specified if it&#8217;s required for recipe preparation. See section “Rotisserie” here.</li>
<li>Roasting peppers above a gas stove burger or preparing meat on a stick above an open fire is consider roasting too.</li>
<li>The temperature of roasting can vary. There are roasting recipes that require high temperatures, low temperatures, or their combination.</li>

<li>Braising is essentially slow cooking in some amount of liquid to tenderize meat and vegetables (the food is not fully submerged).</li>
<li>It is great for preparing meat or vegetables.</li>
<li>The full process of braising should be a combination of two cooking techniques: searing (or sautéing) on high temperature (dry-heat cooking method) followed by braising on a low heat burner (moist-heat cooking method). Some cooks often skip the first technique and start right away with the second technique.</li>
